Maklooba, which translates to “upside-down” in English, is a traditional Palestinian dish made in different ways, but includes vegetables and meat and we flip it at the end before we eat. It is my absolute favorite dish. Today I will be preparing it for some of my friends, so please join me as we talk about its history, different variations, and prepare this delicious meal!
Please find my Maklooba recipe below (for 4 people):
One eggplant, one cauliflower, three potatoes, small bag baby carrots.
One head of garlic, one big onion.
Boneless chicken thighs (8).
Olive oil.
Salt, pepper, cardamom seeds, cardamom powder, all spice, turmeric, nutmeg.
3 cups jasmine/basmati rice.
For the salad:
Tomato, bell pepper, jalapeno pepper, parsley, lemon, salt, olive oil, sumac.
